DAY 12: Loaded Chocolate Chip Sandies

A crispy cookie loaded with chocolate chips, coconut, nuts, oats, and crushed Chex cereal. All of your favorite things packed into a hand-held treat!

RECIPE:

Loaded Chocolate Chip Sandies

Loaded Chocolate Chip Sandies 3

1 cup unsalted butter, softened
1 cup oil
1 cup sugar
1 cup brown sugar
1 egg
2 tsp vanilla extract
3 ½ cups flour
1 tsp baking soda
1 tsp salt
1 cup rolled oats
1 cup crushed Chex cereal (corn or rice)
1 ½ cups chocolate chips
½ cup shredded coconut
½ cup chopped walnuts

Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.

In a large mixing bowl, beat butter, oil, and sugars until light and fluffy. Beat in egg and vanilla.

In a small mixing bowl, whisk together flour, baking soda, and salt. Gradually beat into butter/sugar mixture, until just mixed. Beat in oats, crushed cereal, chocolate chips, coconut, and walnuts.

Let dough sit at room temperature for 10-15 minutes before scooping.

Using a cookie scoop, place level scoops of dough on baking sheets, about 2” apart. Bake for 8-10 minutes. Cool 2-3 minutes on the baking sheets and then remove to wire racks to cool completely.

Makes about 4 dozen cookies.

DAY 12: Christmas M&M Cookies

Chewy delicious cookies made festive for the Christmas season.

I made these cookies with M&M’s designed for baking called “M&M’s Christmas Baking Bits” which are smaller than regular sized M&M’s. The mini-sized candies are less likely to split when baked.

RECIPE:

¾ cup (1 ½ sticks) unsalted butter, softened
1 cup brown sugar
½ cup sugar
1 egg plus 1 egg yolk
2 tsp vanilla extract
2 cups flour
2 Tbs cornstarch
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 bag (11oz) M&M’s Christmas Baking Bits (or use regular M&M’s)
½ cup mini chocolate chips

Preheat oven to 375°F.

In a mixing bowl, beat butter and sugars until light and fluffy. Beat in egg, egg yolk and vanilla.

In a medium bowl, mix together flour, cornstarch, baking powder, baking soda and salt. Beat into butter mixture. Set aside 1/4 cup of the M&M’s. Stir remaining M&M’s and chocolate chips into the dough.

Drop by tablespoonsful onto baking sheets. Press a few of the reserved M&M’s into the top of each cookie ball. Bake for 8-10 minutes. Cool on wire racks.

Makes 3 dozen cookies.

DAY 8: Thick and Chewy Chocolate Chip Cookies

You can never go wrong adding a thick, chewy delicious chocolate chip cookie to your Christmas plate. Cornstarch and an extra egg yolk make these soft and chewy.

RECIPE:

¾ cup (1 ½ sticks) unsalted butter, softened
1 cup brown sugar
½ cup sugar
1 egg plus 1 egg yolk
2 tsp vanilla extract
2 cups flour
2 Tbs cornstarch
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup chocolate chips (more if you like lots of chips)
1 cup chopped walnuts

Preheat oven to 375°F.

In a mixing bowl, beat butter and sugars until light and fluffy. Beat in egg, egg yolk and vanilla.

In a medium bowl, mix together flour, cornstarch, baking powder, baking soda and salt. Beat into butter mixture. Stir in chocolate chips and walnuts.

Twelve Days of Christmas Cookies: Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies

DAY 5: Oatmeal Chocolate Chip Cookies

Nothing fancy. just old-fashioned cookie goodness. These are traditional chewy oatmeal cookies. Add raisins or chocolate chips as you like.

RECIPE:

Oatmeal Chocolate Chip Cookies

1 ¼ cups (2 ½ sticks) butter, softened
1 cup sugar
1 cup brown sugar
2 Tbs milk or cream
2 tsp vanilla
2 eggs
3 cups flour
1 Tbs baking soda
2 tsp salt
1 tsp cinnamon
4 cups rolled oats
1 ½ – 2 cups chocolate chips or raisins
1 cup chopped walnuts

Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mat.

Beat butter and sugars with a mixer until light and fluffy. Add milk, vanilla and eggs; mix well. Add flour, baking soda, salt and cinnamon. Mix. Mix in oats, chocolate chips (or raisins) and walnuts.

Drop  by tablespoonsful onto baking sheets. Bake for 9-10 minutes, or until barely brown around edges. Cookies will still look slightly undercooked in the middle. Cool on baking sheet for 5 minutes, then cool completely on a wire rack.

Makes 5-6 dozen cookies

Twelve (More) Days of Christmas Cookies: Trail Mix Cookies

DAY 6: We’re half-way through our sugar-laden journey through Christmas cookies. Time for a cookie that at least pretends to be healthy. Packed full of everything you love in a good trail mix: dried fruits, nuts, 3 different seeds (and a little chocolate, of course); plus rolled oats, honey, whole wheat flour and wheat germ.  I find these cookies very addicting. I love the hearty mouth-feel and chewy texture.

RECIPE:

Trail Mix Cookies

  • Servings: Makes about 60 cookies

1 cup butter, softened
1 cup packed brown sugar
1/3 cup honey
2 eggs
1 tsp vanilla extract
2 cups flour (white or finely milled whole wheat)
½ cup wheat germ
1 tsp baking soda
½ tsp salt
1 ½ cups rolled oats
½ cup dried cranberries
1 cup chopped dried apricots
1 cup slivered almonds
¾ cup sunflower seeds, unsalted
1/3 cup flax seeds
¼ cup sesame seeds
1 cup chocolate chips

Preheat oven to 375°F.

Cream butter and brown sugar; beat in honey, eggs and vanilla. Beat in flour, wheat germ, baking soda and salt. Stir in oats, fruits, nuts, seeds and chocolate chips.  Mix well.

Drop by tablespoons onto ungreased cookie sheets. Bake at 375°F for 8-10 minutes.

Cool for 5 minutes on baking sheet before removing to wire racks.
