DAY 8: Oatmeal Chocolate Chip Peanut Butter Cookies
With both oatmeal and peanut butter, and no flour, these certainly count as a healthy cookie, right? They are super chewy and hearty enough that one is definitely satisfying.
RECIPE:
Oatmeal Chocolate Chip Peanut Butter Cookies
½ cup butter
1 ½ cups creamy peanut butter
1 ½ cups brown sugar
1 cup sugar
3 eggs
1 tsp vanilla extract
4 cups rolled oats
2 tsp baking soda
1 cup (6 oz) chocolate chips
Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.
In a large mixing bowl, use an electric mixer to beat butter, peanut butter, and sugars until light and fluffy. Beat in eggs and vanilla. Beat in oats and baking soda. Stir in chocolate chips.
Use a medium cookie scoop to drop cookies onto prepared baking sheets. Bake for 9-10 minutes, or until edges are just beginning to brown. Cool on wire racks.
