DAY 12: Sugar-Free Double Chocolate Cookies

Limiting your sugar intake doesn’t have to mean sacrificing flavor. These chocolate chocolate chip cookies are soft and rich and delicious!

RECIPE:

Sugar-Free Double Chocolate Cookies

Sugar Free Chocolate Chocolate Chip Cookies

¼ cup powdered monkfruit/erythritol blend
¼ cup golden erythritol or monkfruit/erythritol blend
2 Tbs cocoa (Dutch process/Special Dark)
2 Tbs unsweetened peanut butter powder
1 tsp baking soda
¼ tsp salt
1 cup natural creamy almond butter
2 Tbs melted butter
2 eggs
2 Tbs water
1 Tbs vanilla extract
½ cup chopped walnuts
¼ cup (1 oz) finely chopped sugar-free dark chocolate bar (at least 55%)

Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.

In a small bowl, use a whisk to combine all dry ingredients; set aside.

In a large mixing bowl, beat together almond butter and butter. Beat in eggs, water, and vanilla. Add dry ingredients to mixing bowl and beat until smooth. Stir in walnuts and finely chopped chocolate.

Use a level medium cookie scoop to scoop dough onto prepared baking sheets. Bake for 10-11 minutes; do not overbake. Cool on a wire rack.

Makes about 2 dozen cookies
