Sheet Pan Cajun Smoked Sausage and Vegetables

I love sheet pan dinners for their easy preparation and even easier clean-up.

This smoked sausage and vegetable combination is very easy, and very adaptable. Use your preferred linked-style smoked sausage like kielbasa, andouille, or chorizo links (not loose raw chorizo). A combination of vegetables of various colors makes for a delicious and healthy dinner. I like using sweet potatoes and/or butternut squash, red peppers, zucchini, and onion.

Start cooking the longer-cooking vegetables first, then add the quicker cooking vegetables closer to the end of cooking time.

I season this with a premixed Cajun seasoning, but you can also use a combination of salt, pepper, onion and garlic powders, thyme, oregano, smoked paprika.

Cheesesteak Stuffed Portobello Mushrooms

A delicious low-carb alternative to a traditional cheesesteak sub. You can add any of your favorite cheesesteak add-ins to the filling: onions, peppers, jalapeños.

I like to use this pre-sliced shaved beef steak. It makes for a quick and easy dinner prep. I usually give this pre-shaved meat a coarse chop so that there are no large slices of beef.

Still have leftover ham? Here is a delicious and healthy low-carb way to use up some of that leftover Easter ham. This ham and vegetable chowder has half of the cauliflower blended with the stock to create a creamy base and the other half chopped into small florets to add texture to the soup. Adding a little cream and cheese makes for a hearty delicious soup. You can cook this in an Instant Pot, a crock pot, or on the stovetop.

Instant Pot Corned Beef and Cabbage

Corned Beef and Cabbage

Saint Patrick’s Day is just around the corner! An Instant Pot pressure cooker makes a wonderfully tender corned beef brisket and doesn’t take all day to cook. Cook the brisket separately first, then keep warm in the oven while quickly cooking the vegetables in the corned beef broth.

I usually make this with potatoes, but we are limiting our starchy carbs these days, so this time we just stuck with cabbage, carrots, and celery.

Serve with fresh ground horseradish, or a horseradish sauce on the side.

If you have leftover corned beef, or you want to throw an extra brisket in the Instant Pot while you are cooking, this layered Reuben Casserole might just be better than the original corned beef and cabbage:

Chicken Tikka Masala

Chicken Tikka Masala

After a week spent outside in the beautiful sunshine and warm weather (in mid-February!), the temperature has taken a nose dive this weekend. That makes this a perfect time to make a hearty curry for (maybe?) this last venture into winter.

Chicken Tikka Masala is a spice-filled, tomato-based Indian curry full of delicious tender chicken.

I use a Tandoori spice blend from Spiceology to marinate the chicken before roasting it and adding it to the curry base. You could also use a prepared tandoori paste, or a mixture of garam masala, turmeric, coriander, and Kashmiri chili powder.

Serve over rice with naan bread, if desired. Recipe for homemade Naan Bread:
