A delicious appetizer perfect for dipping chips or vegetables. Mix ingredients together in a disposable pan and cook on a smoker for a deep, rich flavor.
RECIPE:
Smoked Queso Dip
1 can (10 oz) Rotel tomatoes with chilies, undrained
1 can (4 oz) mild green chilies, undrained
½ cup heavy cream
4 oz cream cheese, cubed
2 cups shredded pepper jack cheese
2 cups diced/shredded white American cheese
Preheat smoker to 250°F.
Place all ingredients in an 8×8” foil pan; do not drain liquid off of tomatoes and chilies. Stir gently. Place pan on a rack in the smoker. Cook, uncovered, for 30 minutes, and then stir dip. Continue to cook for a total of about 90 minutes, stirring about every 30 minutes.
Serve with tortilla chips or sliced raw vegetables.
