DAY 11: Mint Chocolate M&M’s Cookies

Chocolate and mint are the perfect Christmas flavor combination. You can top these chocolate cookies with your choice of holiday M&M’s. These are my favorites:

Dark Chocolate Mint m&m's Chocolate Mint m&m's

My very favorite are the all-green “Dark Chocolate Mint” flavor, but they can be hard to find. The “Holiday Mint” flavor is a good substitute, and come with a brighter Christmas color variety.

RECIPE:

Mint Chocolate M&M’s Cookies

2 cups semi-sweet chocolate chips
¼ cup butter
2 ½ cups flour
¼ cup cocoa powder
2 tsp baking powder
1 tsp salt
¼ cup butter
1 cup sugar
¾ cup brown sugar
2 eggs
2 Tbs milk or cream
1 Tbs vanilla extract
1 bag (10 oz) M&M’s (Holiday Mint or Dark Chocolate Mint flavor)

Preheat oven to 375°F. Line baking sheets with parchment paper or silicone mats.

Combine chocolate chips and ¼ cup butter in a small saucepan. Heat over low heat until just barely melted. Or melt in microwave in a Pyrex bowl.

Combine flour, cocoa, baking powder, and salt in a medium bowl. Whisk until well mixed. Set aside.

In a mixing bowl, beat ¼ cup butter with the white and brown sugars. Mix in eggs, milk, and vanilla. Beat in melted chocolate. Add dry ingredients to the mixing bowl and beat until just barely combined.

Drop by tablespoonsful onto baking sheets. Bake at 375°F for 8-10 minutes. While cookies are still warm, press 3-4 M&M’s onto the top of each cookie. Remove cookies to wire rack to cool.

Makes about 3 dozen cookies

DAY 12: Christmas M&M Cookies

Chewy delicious cookies made festive for the Christmas season.

I made these cookies with M&M’s designed for baking called “M&M’s Christmas Baking Bits” which are smaller than regular sized M&M’s. The mini-sized candies are less likely to split when baked.

RECIPE:

¾ cup (1 ½ sticks) unsalted butter, softened
1 cup brown sugar
½ cup sugar
1 egg plus 1 egg yolk
2 tsp vanilla extract
2 cups flour
2 Tbs cornstarch
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 bag (11oz) M&M’s Christmas Baking Bits (or use regular M&M’s)
½ cup mini chocolate chips

Preheat oven to 375°F.

In a mixing bowl, beat butter and sugars until light and fluffy. Beat in egg, egg yolk and vanilla.

In a medium bowl, mix together flour, cornstarch, baking powder, baking soda and salt. Beat into butter mixture. Set aside 1/4 cup of the M&M’s. Stir remaining M&M’s and chocolate chips into the dough.

Drop by tablespoonsful onto baking sheets. Press a few of the reserved M&M’s into the top of each cookie ball. Bake for 8-10 minutes. Cool on wire racks.

Makes 3 dozen cookies

Twelve Days of Christmas Cookies: Chocolate Chip Cookies

DAY 3: Except I didn’t actually use chocolate chips. I used red and green Holiday Swirl chips in one batch and red and green dark chocolate M&M’s in a second batch. During non-holiday times, I would use chocolate chips (or my favorite Ghirardelli bittersweet chips).

I spent a long time trying to find the “perfect” chocolate chip cookie recipe. I know that will be different for everyone, depending on what you expect in sweetness, texture, chocolate density. This is my compilation of the best parts of several different recipes. Including an oatmeal cookie. The main differences between this and most chocolate chip cookie recipes: melted butter, and ground oats. The melted butter starts to melt the sugars (but not completely) giving the cookies a wonderful smooth texture. The ground oats help to give lift and keep the cookies soft. I am definitely NOT a crunchy cookie fan.

Chocolate Chip Cookies (Adapted for the holidays)

1 cup butter, melted
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 large eggs
1 Tbs vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 ½ cups uncooked regular oats (or 2 cups oat flour)
1 ½ cups chocolate chips (or holiday chips, M&M’s)
1 cup chopped pecans or walnuts, optional

Preheat oven to 375°F.

Beat butter and sugars with a mixer. Add eggs and vanilla, beating well.

In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually add to butter mixture and beat well.

Process oats in a food processor until finely ground. Add to butter mixture and beat well. Stir in chocolate chips and nuts.

Drop cookies by tablespoonfuls onto ungreased baking sheets. Bake for 8-10 minutes or until lightly browned. Cool slightly on baking sheets. Then, remove to wire racks to cool completely.

Makes about 4 dozen cookies
