DAY 9: Chocolate M&M’s Cookies
M&M’s always make cookies more fun! This is a simple drop cookie recipe that starts on the stovetop, so you don’t even have to soften your butter. Double chocolate deliciousness.
RECIPE:
Chocolate M&M’s Cookies
1 cup butter
1 ½ cups packed brown sugar
2 Tbs water
12 oz (about 2 cups) semi-sweet chocolate chips
2 large eggs
3 cups flour
½ tsp salt
1 ¼ tsp baking soda
1 package (11 oz) mini baking M&M’s
Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.
In a saucepan over low heat, combine butter, sugar, and water. Heat until butter is melted. Add chocolate chips and stir until mostly melted. Remove from heat and stir until completely melted (mixture will still look grainy). Pour mixture into a large mixing bowl. Let stand for 15-20 minutes to cool slightly. Beat chocolate mixture until smooth and barely warm.
Beat eggs into cooled mixture one at a time on high speed. Add flour, salt, and baking soda; mix on low speed until well blended. Mix in M&M’s. Let dough stand, covered, for 10 minutes before scooping.
Using a medium cookie scoop, drop level scoops onto baking sheets. Bake for 8-10 minutes. Cool for 3-4 minutes on baking sheet before removing to wire racks to cool.
Makes about 5 dozen cookies.
