DAY 9: No-Bake Chocolate Oatmeal Bars
Rich and indulgent no-bake cookie bars. Layers of soft oat crust and chocolate peanut butter fudge, topped with more oatmeal streusel.
RECIPE:
No-Bake Chocolate Oatmeal Bars
1 cup chocolate chips
½ cup creamy peanut butter
1 ½ cups salted butter
¾ cup brown sugar, packed
2 tsp vanilla extract
4 ½ cups rolled oats
Line a square baking dish (8-9” square) with parchment paper.
Combine chocolate chips and peanut butter in a microwave safe bowl. Heat in 30 second increments, stirring, until melted and smooth. Set aside.
In a large saucepan, cook butter and brown sugar for about 4 minutes, or until butter has melted and sugar has dissolved. Stir in vanilla and then oats. Cook over low heat for and additional 3 minutes, or until well mixed.
Press 2/3 of the oat mixture into the prepared pan. Pour the chocolate/peanut butter mixture over the crust. Dot remaining oat mixture over the chocolate layer, pressing gently.
Refrigerate 2-3 hours, or until firm. Bring to room temperature before cutting into squares.
Makes 16 squares
