On Sundays, I teach a children’s church class of about a dozen 4-7 year olds. This week our lesson was on the book of Proverbs. While there are many good lessons and teachings in Proverbs, there isn’t a clear story line that grabs the attention of young minds.
To try to keep them at least a little bit engaged as we discussed some relevant proverbs, I made fortune cookies with slips of paper inside containing a few proverbs that we could discuss. I tried to impress upon them that these were NOT fortune cookies, but “Proverb Cookies”.
This is the list of proverbs that I printed to put in the cookies. Some we opened in class, and the rest were given out to others later.
When making fortune cookies, there are always a few that don’t fold correctly, or harden too quickly to fold. My family always loves these casualties to my baking.

This is a quick one-skillet meal that can be made in less than 30 minutes. Chicken and fresh green beans in a slightly spicy lemon sauce.

Zucchini bread is always the favorite option for an excess of garden squash in the summer.
Chocolate chips are optional. I prefer it without, but many in our family like a generous studding of chocolate chips in their zucchini bread.

Souvlaki chicken is a flavorful Mediterranean dish. The chicken is marinated overnight in a mixture of Greek yogurt, lemon juice, garlic, and Greek herbs. During summer months I love to add fresh lemon thyme from my garden to the marinade and as a garnish on the cooked kabobs.
If you don’t want to prepare kabobs, you can also marinate the chicken thighs or breasts whole, and grill or roast the whole pieces of chicken until cooked through.
We like to serve these kabobs with roasted zucchini or asparagus, and with hummus and tzatziki dips. You can also serve these kabobs with warm pita bread, if desired.

This traditional four bean salad with a vinegar dressing is welcome at every cookout. I use stevia in place of sugar in the traditional recipe, making this a healthy side dish that goes perfect with all kinds of grilled meat.
