DAY 9: Sugar Free Chocolate Chunk Cookies
Sugar free and gluten free, these soft chocolate cookies satisfy a sweet tooth without the guilt.
RECIPE:
Sugar Free Chocolate Chunk Cookies

2/3 cup coconut flour
2 packets Knox gelatin
1 tsp baking soda
¼ tsp salt
½ cup unsalted butter, melted
2/3 cup golden low carb sweetener
4 eggs
1 Tbs vanilla extract
½ cup chopped sugar free dark chocolate bar (about 1 bar Lily’s choc), or use chocolate chips
½ cup chopped pecans or walnuts.
Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.
In a small bowl, mix together coconut flour, gelatin, baking soda, and salt. Set aside.
In a mixing bowl, beat butter and sweetener until smooth. Beat in eggs and vanilla. Beat in dry ingredients until just combined. Stir in chopped chocolate and nuts.
Use a medium leveled cookie scoop to drop dough onto baking sheets about 2 inches apart. Bake for 9-10 minutes. Cool completely on baking sheets before removing to serving plate or wire rack.
Makes about 2 dozen small cookies
