One final zucchini recipe before summer leaves us for good.
Three kinds of chocolate (Nutella, cocoa powder, and chocolate chips) make the zucchini hard to spot in this delicious quick bread. But the added vegetable helps to keep the loaves soft and moist. And it lets you pretend this is a healthy treat.
This recipe make one regular-sized loaf or 6 mini loaves, which freeze perfectly and are just the right size for when there are only two of us left at home.

On Sundays, I teach a children’s church class of about a dozen 4-7 year olds. This week our lesson was on the book of Proverbs. While there are many good lessons and teachings in Proverbs, there isn’t a clear story line that grabs the attention of young minds.
To try to keep them at least a little bit engaged as we discussed some relevant proverbs, I made fortune cookies with slips of paper inside containing a few proverbs that we could discuss. I tried to impress upon them that these were NOT fortune cookies, but “Proverb Cookies”.
This is the list of proverbs that I printed to put in the cookies. Some we opened in class, and the rest were given out to others later.
When making fortune cookies, there are always a few that don’t fold correctly, or harden too quickly to fold. My family always loves these casualties to my baking.

A delicious marriage of lemon meringue pie and no-bake cheesecake!
If you make your own lemon curd, you will come out about even on the eggs, since lemon curd only uses yolks and the meringue topping only uses whites.
I like to line the inside of my springform pan with a 4” high acetate strip before adding the cheesecake filling (after cooking the crust). Sometimes these are called “cake collars.” This will help keep the sides of your cheesecake smooth when removing it from the pan. The strip will just peel off of the cheesecake after taking off the side of the springform pan.

Happy π Day! Here is a sugar free version of a French silk chocolate pie. The addition of fresh berries make it less rich, but you will still want to eat it in small serving sizes.

This dessert combines two favorites: cheesecake and chocolate chip cookies. The crust is made from chocolate chip cookie dough. The filling is a vanilla cheesecake. The top of the cheesecake is then dotted with chunks of cookie dough and baked.
If you want a more chocolatey cheesecake, you can stir additional chocolate chips into the cheesecake batter.
