DAY 9: Thin Mint Puppy Chow
A crunchy chocolate snack mix that will remind you of your favorite Thin Mint Girl Scout Cookie.
Chex cereal is coated with dark chocolate and Andes mint chocolates, and mixed with mint flavored M&M’s.
RECIPE:
Thin Mint Puppy Chow
12 oz (2 cups) dark chocolate chips; I use Ghirardelli 60% cacao chips
1 (10 oz) bag Andes baking chips (or use equivalent amount of unwrapped Andes)
10-12 cups (12-15 oz) Rice Chex cereal
2 cups powdered sugar
1 (8 oz) bag M&M mint candies
Prepare pan: Line a large baking sheet (half sheet size; or use 2 regular-sized baking sheets) with parchment paper.
Place chocolate chips and Andes mints in a 4-cup Pyrex measuring cup or microwave safe bowl. Heat for one minute; stir. Continue melting in 30-second increments until chocolate is totally smooth, about 2 minutes.
Place Rice Chex cereal in a large mixing bowl, preferably one with a tight fitting lid. Pour melted chocolate over cereal and gently stir with a silicone spatula until cereal is completely covered.
While chocolate is still warm, add powdered sugar to the bowl and stir briefly to loosen cereal from the bottom of the bowl. Put the lid on the bowl and shake gently to coat the chocolate cereal completely with the powdered sugar. (If you don’t have a lidded bowl, you can stir the mixture gently, or place the mixture in Ziploc bags to shake.)
Pour coated mixture out onto the prepared parchment lined pan. Let mixture set for at least 30 minutes, or place in freezer, until mixture is hardened. Stir in M&M mint candies and store in an airtight container.
TIP: If you are gifting these in small gift bags, place the hardened coated cereal mixture in the bags first, and then sprinkle in a few M&M’s.
