DAY 11: Chocolate Orange Shortbread Sticks
Delicious orange shortbread sticks coated in dark chocolate.
RECIPE:
Chocolate Orange Shortbread Sticks
1 cup butter
½ cup sugar
1 egg
1 tsp vanilla extract
½ tsp orange extract
1 tsp fresh orange zest
2 ½ cups flour
8 oz bittersweet chocolate
1 Tbs light corn syrup
2 tsp coconut oil or shortening
Use a mixer to cream butter and sugar until light and fluffy. Beat in egg, vanilla and orange extracts, and orange zest. Gradually blend in flour.
Chill dough for about 30 minutes. Remove from refrigerator and roll into a rectangle about ¼” thick. Use a sharp edge (I use a plastic ruler) to cut rectangles about 3” long and ½” wide. Place on parchment paper lined baking sheets.
Preheat oven to 325°F.
Bake for about 13-15 minutes; do not brown. Remove immediately to wire rack to cool.
While cookies cool, heat chocolate, corn syrup, and coconut oil (or shortening) in a microwave safe bowl. Pour into a narrow jar (I use a half-pint canning jar). Dip about ¾ of each cooled cookie in the melted chocolate and place on parchment paper to cool. Let chocolate completely harden and then drizzle cookies with additional chocolate glaze.
Makes about 3 dozen cookies
