DAY 6: Chocolate Peanut Butter Cookies
Chocolate and Peanut Butter: a classic flavor combination in an easy to make soft cookie.
RECIPE:
Chocolate Peanut Butter Cookies
½ cup butter
½ cup creamy peanut butter
½ cup sugar
½ cup brown sugar
2 Tbs milk
1 tsp vanilla extract
1 egg
1 cup flour
1/3 cup dark cocoa powder
¾ tsp baking soda
½ baking powder
½ tsp salt
Preheat oven to 375°F.
Line baking sheets with parchment paper or silicone mats.
In a large mixing bowl, use an electric mixer to beat together the butter, peanut butter, sugar, and brown sugar. Beat in milk and vanilla extract. Add the egg and mix just until combined.
In a small mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Add the dry mixture to the wet mixture and mix until just combined.
Using a medium cookie scoop, scoop barely level scoops, then roll the dough into balls. Place on prepared baking sheets. Use a fork to press the dough down and create a crisscross pattern on each cookie.
Bake for 7-8 minutes, or until just set around the edges. Cool slightly on the baking sheets, then move cookies to a wire cooling rack to cool completely.
