A delicious breakfast casserole for those who like a little spice in their life.
RECIPE:
Sausage & Green Chile Breakfast Casserole
2 lb spicy or mild Italian sausage
1 large onion, chopped
18 eggs, beaten
1 large container (16-24 oz) small curd cottage cheese
1 can (4 oz) diced mild chiles
½ – 1 can (4 oz) diced jalapenos, drained
1 ½ tsp salt
½ tsp fresh ground black pepper
2 cups shredded sharp cheddar cheese
Preheat oven to 325°F. Grease a 9×13” baking dish.
In a large skillet, cook sausage until browned; drain excess grease. Add onion to pan and cook until soft. Remove from heat and let cool slightly.
Mix remaining ingredients in a large mixing bowl. Stir in cooked sausage and onions. Pour into prepared baking dish.
Bake for 1 hour, or until center is set. Let rest for 15 minutes before cutting into squares to serve.
