How about a creamy coconut cream pie filling on a shortbread crust with the thinnest layer of chocolate ganache squeezed in, then topped with whipped cream and toasted coconut?!  And since they are so addicting, make them in a 9×13” pan so there are plenty of leftovers for the next day.

RECIPE:

Coconut Cream Pie Bars

  • Servings: Makes 24 bars

Crust:
1 ½ cups all-purpose flour
6 tablespoons powdered sugar
¾ cup (1 ½ sticks) salted butter, cut into pieces

Ganache:
¼ cup heavy cream
¾ cup chocolate chips (bittersweet or semisweet)

Coconut Cream Filling:
1 ½ cups granulated sugar
2/3 cup cornstarch
½ teaspoon salt
3 cups (2 cans) coconut milk
2 cups half-and-half
1 cup heavy cream
4 eggs, beaten
½ teaspoon coconut extract
½ teaspoon vanilla extract
1 ½ cup sweetened, flaked coconut, toasted*

Whipped Cream Topping:
2 cups heavy whipping cream
3 tablespoons powdered sugar
¼ cup coconut, toasted*

Preheat oven to 350°F. Spray a 9×13-inch baking dish with baking Pamm (the kind with flour).

Crust: Combine the flour and powdered sugar; cut in the butter using a pastry blender, two knives or a food processor. Press the mixture into the prepared baking dish. Bake for 14-18 minutes until the crust is light brown. Cool crust on a wire rack for 10 minutes.

Ganache: Place the chocolate chips in a small bowl. Heat ¼ cup cream in a Pyrex measuring cup in the microwave for 45 seconds, or until simmering. Pour the cream over the chocolate and let the mixture stand for 1-2 minutes, then stir until smooth. If chips do not completely melt, microwave for 20 seconds and stir again. Pour the chocolate over the bottom of the crust and smooth to the edges. Place pan in the fridge to chill until crust is cooled completely and ganache has hardened.

Filling: Use a whisk to mix sugar, cornstarch  and salt in a large saucepan. Mix in coconut milk, half-and-half, cream, and beaten eggs. Over medium heat, bring the mixture to a boil, whisking constantly until it is very thick. If the mixtures has lumps, you can strain it through a fine mesh sieve. (If you whisk diligently while cooking, you will not need to strain the pudding). Remove from heat and stir in the coconut and vanilla extracts and toasted coconut. Pour the filling over the chilled ganache and refrigerate the bars until they are set, about 4 hours.

Topping: With a mixer, whip the heavy cream and powdered sugar until soft peaks form. Spread the cream over the chilled bars; sprinkle with toasted coconut. Chill until ready to serve.

Makes 24 bars

*Notes:

** To toast the coconut, spread coconut onto a baking sheet and bake at 325°F, stirring every 5 minutes for about 15 minutes, or until light brown. Watch closely so it doesn’t burn.

** If you are making these bars ahead of time, prepare the crust, chocolate and filling and refrigerate. Add the whipped cream topping just before serving. Whipped cream will begin to get watery if left in the refrigerator for more than a day.

** Halve recipe to make in a deep-dish pie pan or 8×8” pan.

Pumpkin Sheet Cake

Due to a late Halloween (thanks to Hurricane Sandy) and an earlier than usual Thanksgiving, it is time to do some serious Thanksgiving planning around here!

This is a quick and easy dessert perfect for any fall holiday or for surprising the kids with a mid-week dessert just for the fun of it. It is amazing the bewildered (but joyful) looks on their faces when you produce dessert without any other reason than that you love them.

RECIPE:

Pumpkin Sheet Cake (or Pumpkin Bars) with Cream Cheese Icing

Pumpkin Sheet Cake

4 eggs
1 2/3 cup sugar
1 cup oil
1 tsp vanilla
1 16oz can of pumpkin (about 2 cups)
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg

Preheat oven to 350°F.

Using a mixer, beat eggs, sugar, oil, vanilla and pumpkin until light and fluffy.  In a separate bowl, stir together flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg. Fold into pumpkin mixture.

Spray a 15x10x1” jelly roll pan to make Pumpkin Bars or a 9×13” pan to make a Pumpkin Sheet Cake with cooking spray (preferably the kind with flour made for baking). Spread batter into prepared pan.

Baking Times: For 15×10” pan: Bake for 25-30 minutes, or until set.
For 9×13” pan: Bake for 35-45 minutes.

Cool in pan; frost in pan.

CREAM CHEESE ICING:
1 – 8oz package of cream cheese
½ cup butter
1 tsp vanilla
2 cups powdered sugar
Pumpkin pie spice and/or cinnamon (optional)
Toasted finely chopped pecans or walnuts (optional)

Using a mixer, beat cream cheese, butter, and vanilla until light and fluffy. Beat in powdered sugar. Optional: beat in about ¼ tsp pumpkin pie spice or cinnamon, if desired.

Frost cooled cake. Sprinkle with nuts and/or pumpkin pie spice for garnish.

Refrigerate cake until ready to serve.

Pumpkin Oat Waffles with Cinnamon Syrup

Happy Halloween!

It is not feeling much like Halloween here in western Pennsylvania. On Monday, in anticipation of Hurricane Sandy, school was cancelled (Tue) and delayed (Wed), trick-or-treating was moved to Saturday, and school Halloween parties and parades moved to Friday. Gratefully, we had much less of an impact from the storm than was predicted, so kids are back at school today (on time!). But with all of the Halloween activities for today postponed, it feels like just another wet, slushy Wednesday.

We were all prepared to wake up on Tuesday without power, but instead we had a great day at home together with nothing on the schedule! I love days like that. Days that can start with a great breakfast full of healthy things like pumpkin and oats and topped with unhealthy things like a thick homemade cinnamon syrup.

RECIPES:

Pumpkin Oat Waffles

  • Servings: Makes 20 small waffles

2 cups flour
¾ cup rolled oats
2 Tbs cornstarch
2 tsp baking powder
1 ½ tsp baking soda
½ tsp salt
2 tsp cinnamon
¼ tsp ground ginger
1/8 tsp ground cloves
1/8 tsp ground nutmeg

2 cups buttermilk
4 eggs
1 cup pumpkin puree
½ cup butter, melted
½ cup brown sugar

Combine dry ingredients in a mixing bowl. Use a whisk to mix. Combine wet ingredients in a separate mixing bowl. Use a mixer to beat thoroughly. Beat in dry ingredients until just mixed. Do not stir batter after mixing.

Use a ladle or measuring cup to pour batter evenly into hot waffle maker (about 2 cups for the 4 small Belgian waffles in my waffle maker). Cook for about 3-5 minutes, or according to directions on your waffle maker. Remove waffles from waffle maker and place on a wire rack (not a plate). Serve immediately or keep warm in a warm oven (very low heat).

Makes about 5 large Belgian waffles (20 small squares)

Cinnamon Syrup

¾ cup pure maple syrup
¼ cup sweetened condensed milk
2 Tbs butter
½ tsp cinnamon

Combine all ingredients in a small saucepan. Bring to a boil. Reduce heat; simmer for 5 minutes. Serve warm.

Taco Cornbread Pie

Our Little J is a Mexican food junkie. When she doesn’t like what I serve for dinner, she makes her way to the spice drawer and returns with her jar of “Taco Magic” (known to the rest of the world as chili powder). She then proceeds to turn any meal into tacos. Meatloaf, meatballs, any roasted or baked chicken dish: instant tacos. A generous sprinkle into most soups: taco soup.

So when she hears that I am actually making a “real” Mexican-flavored dish, she is giddy with excitement, and during dinner the Taco Magic jar stays in the spice drawer where it belongs.

If you have an oven safe dish that can also go on the stovetop (like a dutch oven, cast iron skillet, or skillet with oven-safe handles), this is an easy one pot meal. I always love cutting down on dishes.

Taco Pie is the Mexican version of a Shepherd’s Pie or Pot Pie. The filling is a taco flavored combination of ground beef, black beans, tomatoes, corn, peppers, green chilies. All of the great ingredients of tacos without 600 little bowls to wash. The crust is a cheese-topped cornbread that bakes in the oven on top of the filling.

RECIPE:

Taco Cornbread Pie

Taco filling:
2 lb ground beef
1 red pepper, chopped
1-2 hot peppers, finely chopped (adjust to taste)
1 onion, chopped
1 Tbs chili powder
1 tsp ground cumin
½ tsp oregano
½ tsp salt
½ tsp black pepper
1 can chili-seasoned tomatoes
1 small can diced green chiles, undrained
1 small can sliced black olives, drained
1 can corn, drained
1 can black or kidney beans, drained & rinsed

Cornbread topping:
1 box Jiffy corn muffin mix
¼ cup butter, melted
½ cup Greek yogurt or sour cream
2 eggs
2 cups shredded cheese

Optional garnishes:
Salsa, sour cream, diced avocados (or guacamole)

Preheat oven to 375°F.

Brown the ground beef in an oven safe skillet.** Drain fat. Add peppers and onions to the skillet. Stir in chili powder, cumin, oregano, salt and pepper. Cook for 2-3 minutes, or until onions just begin to soften. Stir in tomatoes, canned chilies, olives, corn and beans. Simmer mixture over low heat, uncovered, for 10 minutes. Taste and add additional salt, if needed.

Cornbread topping: In a mixing bowl, stir together melted butter, yogurt or sour cream and eggs. Stir in corn muffin mix with a rubber spatula until just mixed.

Spread the cornbread batter over the hot filling in the skillet. Bake at 375°F for about 30 minutes, or until cornbread is cooked through and lightly browned. (Exact cooking time will depend on the diameter of your baking dish. If the top of the cornbread is brown, but center is not set, cover with foil and continue to cook until set). Top with cheese. Cook 5 additional minutes. Remove from oven and let cool for 5 minutes before serving.

Serve with sour cream, avocados, and/or salsa, if desired.

**NOTE: If you don’t have an oven safe skillet (or dutch oven), then cook meat mixture in a regular skillet, and transfer to a large baking dish.

Pumpkin Cream Cheese Muffins

Fall and pumpkin just seem to go hand in hand. Cream cheese, however, that is an all-season ingredient. Paired together you get a moist, delicious muffin perfect for any time of the year.

A crunchy, sugary topping on a pumpkin-pie-spiced-cheesecakey muffin. Now all we need is some hot cocoa.

RECIPE:

Pumpkin Cream Cheese Muffins

Muffin Batter:
1 cup pumpkin
¾ cup oil
½ cup sugar
½ cup brown sugar
2 eggs
1 tsp vanilla
1 ½ cups flour
2 Tbs buttermilk powder
½ tsp salt
½ tsp baking soda
1 ½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ground cloves
¼ tsp ground ginger
¼ tsp ground allspice

Cream Cheese Swirl:
8 oz (1 pkg) cream cheese, softened
1 egg
1 cup powdered sugar
1 Tbs flour

Topping:
2 Tbs sugar
1 Tbs flour
1 tsp  cinnamon
2 Tbs butter, cold

Preheat the oven to 350˚ F. Line muffin pans with paper liners.

Muffin Batter: Using an electric mixer, beat together the pumpkin, oil, sugars, eggs and vanilla. In a separate bowl, combine the flour, buttermilk powder, salt, baking soda and spices. Add dry ingredients to mixing bowl and beat until just combined.

Cream Cheese Swirl: With a mixer, beat cream cheese and egg until combined. Beat in powdered sugar and flour.

Topping: Mix the sugar, flour and cinnamon in a small bowl. Using a pastry blender, cut in butter until crumbly.

Fill each muffin paper about 1/3 full with muffin batter (about 2 Tbs). Add a small spoonful of filling (about 1-2 tsp). Repeat layers in each muffin cup. Using a table knife, gently swirl batters. Sprinkle topping over the swirled muffin batter.

Bake at 350˚ F for 17-20 minutes. Cool in pan for 5 minutes before removing.

Makes 15-18 muffins
