DAY 4: Chocolate Walnut Cookies

A simple, but delicious, drop cookie that forms a brownie-like top crust when they bake. Perfect for the dark chocolate lover!

Chocolate Walnut Cookies

12 oz bittersweet chocolate chips
½ cup butter
2 Tbs milk
3 eggs
1 cup sugar
2 tsp vanilla extract
½ cup flour
1 Tbs cocoa powder
½ tsp salt
½ tsp baking powder
1 ½ cups chopped walnuts

Preheat oven to 375°F. Line baking sheets with parchment paper or silicone mats.

Place chocolate chips and butter in a medium saucepan. Over low heat, stir constantly until butter is completely melted, and most of the chocolate is melted. Remove from heat and continue stirring until chocolate chips completely melt. Stir milk into chocolate mixture until smooth.

In a large mixing bowl, use an electric mixer to beat eggs, sugar, and vanilla until light and fluffy (about 5 minutes). On low speed, beat in the melted chocolate mixture until mixture is smooth.

In a small bowl, use a whisk to mix together the flour, cocoa powder, salt, and baking powder. Stir dry ingredients into the mixing bowl until just barely mixed. Stir in walnuts.

Cover dough and refrigerate for about 30 minutes.

Use a level medium cookie scoop (2 Tbs) to drop dough onto prepared baking sheets. Bake for 11-12 minutes, or until top of cookies just begin to crack. Remove from oven and cool cookies on a wire rack.
