This is a quick one-skillet meal that can be made in less than 30 minutes. Chicken and fresh green beans in a slightly spicy lemon sauce.
It can be served as is, or over rice or noodles.
RECIPE:
Spicy Lemon Chicken with Green Beans
Chicken Seasonings:
1 tsp paprika
1 tsp onion powder
½ tsp salt
½ tsp fresh ground black pepper
1 Tbs olive oil
2 Tbs butter, divided
2 lb boneless chicken breasts, cut into serving sized pieces
1 lb thin French green beans
1 ½ cups chicken broth
1 tsp Sriracha
2 cloves of garlic, minced
1/8 tsp crushed red peppers
Juice from half of a lemon
2 Tbs chopped fresh parsley, or 2 tsp dried
Scant 1/8 tsp xanthan gum (optional)
Combine Chicken Seasonings in a small bowl; set aside.
Heat olive oil and 1 Tbs butter in a large skillet over medium heat. Add chicken breasts to hot skillet and sprinkle with half of the seasonings. Brown chicken over medium heat and turn over; sprinkle with remaining seasonings and brown second side. Remove browned chicken to a plate (chicken will not be completely cooked through yet).
Heat remaining 1 Tbs butter in the skillet. Add green beans and cook for 2 minutes. Add chicken broth, Sriracha, garlic, and crushed red peppers. Return chicken to the pan and bring broth to the boiling point. Cover skillet with a lid, reduce heat, and cook for 5-7 minutes, or until beans are crisp-tender and chicken is cooked through. Stir in lemon juice and parsley. Optional: for a slightly thicker sauce, sprinkle in xanthan gum while stirring.
Serve with rice or noodles, if desired.
