DAY 2: Lemon Bars

There are some classic desserts that completely live up to their reputation. Lemon bars definitely fall into that category. They are a sweet, tart confection that will make you think fondly of trips to grandma’s house.

RECIPE:

Lemon Bars

  • Servings: 24 squares or 48 triangles

Lemon Bars 1

Crust:
1 cup butter, softened
½ cup sugar
¼ tsp kosher salt
½ tsp vanilla
2 cups flour

Lemon Filling:
6 eggs, at room temperature
3 cups sugar
2 Tbs grated lemon zest
1 cup fresh lemon juice
Pinch of salt
1 cup flour
Additional powdered sugar

Crust:
Grease a 10×15” baking dish, or spray with nonstick baking spray.

In a large mixing bowl, beat butter, sugar, salt, and vanilla until light and creamy. Gradually beat in flour on low speed. Press dough into the prepared pan. Chill crust for 30 minutes.

Preheat oven to 350°F.

Lemon Filling:
In a large mixing bowl, whisk together the eggs, sugar, lemon zest, lemon juice, and salt. Whisk in flour until smooth. Pour over chilled crust.

Bake for 30-40 minutes, or until filling is set (center is no longer jiggly). Cool completely at room temperature. Chill for 2-3 hours before cutting.

Cut into 24 squares, and then into triangles, if desired. Dust with powdered sugar just before serving.

Makes 24 squares or 48 triangles
