DAY 6: Pecan Toffee Blondies
These blondies are quick and easy to prepare, and full of nuts and butterscotch flavor. I use the Heath brand toffee bits in these bars.
RECIPE:
Pecan Toffee Blondies
1 cup unsalted butter, melted
2 cups dark or light brown sugar (very lightly packed)
2 eggs
1 Tbs vanilla extract
2 cups flour
1 tsp baking powder
1 tsp salt
2 cups chopped pecans
1 cup (about 8 oz) toffee bits
Preheat oven to 375°F. Spray a 9×13” baking pan with nonstick baking spray.
In a large mixing bowl, beat butter and brown sugar until light and fluffy, at least 2 full minutes. Beat in eggs and vanilla. Gradually beat in flour, baking powder, and salt. Stir in pecans and toffee bits.
Spread batter into the prepared pan. Bake for 35-40 minutes, or until baked through. Cool in pan completely before cutting into squares.
