DAY 6: Chewy Oatmeal Cowboy Cookies
Cowboy cookies are a chewy “loaded” oatmeal cookie: full of oats, coconut, chocolate chips, and nuts.
RECIPE:
Chewy Cowboy Cookies
3 cups flour
2 tsp baking powder
2 tsp baking soda
2 tsp ground cinnamon
2 tsp salt
1 ½ cups (3 sticks) unsalted butter, room temperature
1 ¼ cups sugar
1 ¼ cups brown sugar, packed
3 eggs
1 Tbs vanilla extract
3 cups semisweet chocolate chips
3 cups rolled oats
2 cups sweetened flaked coconut
2 cups chopped pecans or walnuts
Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.
In a medium bowl, stir together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large mixing bowl (stand mixer preferred) , cream butter and sugars until light and fluffy, about 3 minutes. Add eggs and vanilla and beat lightly until just mixed. Beat in flour mixture until just combined. Gently beat in chocolate chips, oats, coconut, and nuts.
Use a medium cookie scoop to drop cookies about 2” apart on prepared baking sheets.
Bake for 10-12 minutes, until edges are barely light brown. Cool for 2-3 minutes on baking sheet, then remove cookies to wire rack to cool completely.
Makes 6-7 dozen cookies

I was in for this cookie at “oatmeal!” My daughter and I were just talking about other uses of oats. Then I saw flaked coconut … yum … off to the market for ingredients because these cookies are it! And I confess, as a once Western-riding cowgirl, it’s like my late beloved horse said, “Howdy.”
