DAY 2: Peppermint Bark Reindeer Chow

This is a fun Christmas treat to make with kids. Chex cereal coated in melted white chocolate and crushed candy canes. You can add other things to your mix, like mint m&m’s, or stick to a purist peppermint bark mixture.

Peppermint Bark Reindeer Chow

  • Servings: Makes 6-7 cups

Peppermint Bark Reindeer Chow

6 cups Rice and/or Corn Chex cereal
12-16 oz almond bark or white candy melts*
24 candy canes

Use a food processor to finely chop candy canes; do not lift the food processor lid until the candy “dust” has settled.

Place cereal in a large mixing bowl. Melt almond bark or candy melts over low heat in a saucepan, or in 30 second intervals in the microwave. Stir until smooth. Pour melted candy over the cereal, stirring with a silicone spatula until cereal is well covered. While cereal mixture is still warm, add crushed candy canes and stir gently until cereal is coated. Turn mixture out onto a large piece of parchment paper. Let sit at room temperature until candy is solid.

Notes:
-Use 12 oz of white chocolate for a light candy coating, and up to 16 oz for a heavier candy coating.
-Use a vanilla candy melt made for melting; do not use white chocolate chips. They do not melt smoothly without the addition of oil/shortening.
