DAY 6: Chocolate Orange Cookies
This is a perfect cookie for the chocolate orange lover! The orange flavor is not overwhelming, but orange zest and finely chopped orange chocolate make for a wonderfully rich chocolate cookie with a brownie-like outer crust and soft fudgy center.
I like to use the Lindt brand Intense Orange Dark Chocolate, but you can use any orange flavored dark chocolate.
RECIPE:
Chocolate Orange Cookies
2 ¼ cups flour
½ cup cocoa powder
1 Tbs cornstarch
2 tsp baking powder
1 tsp salt
½ cup unsalted butter
½ cup brown sugar
½ cup sugar
2 Tbs water
12 oz chocolate chips
1 Tbs vanilla extract
¼ tsp orange extract
1 tsp orange zest
¼ cup whole milk
2 (3.5 oz each) Lindt dark chocolate orange bars, chopped
Preheat oven to 350°F. Line baking sheets with parchment paper or silicone mats.
In a medium-sized bowl, whisk together flour, cocoa, cornstarch, baking powder, and salt. Set aside.
In a saucepan over low heat, combine butter, sugars, and water. Heat until butter has melted. Add chocolate chips and stir until they are mostly melted. Remove from heat and stir until chips are completely melted. Stir in vanilla and orange extracts and orange zest. Pour mixture into a stand mixer or large mixing bowl. Let stand 10 minutes to cool slightly.
Beat chocolate mixture in mixing bowl for 2 minutes. Beat in eggs one at a time. Beat in milk. Add the dry ingredients to the mixer and beat until just combined. Beat in chopped orange chocolate.
Using a medium cookie scoop, drop level scoops onto baking sheets. Bake for 9-10 minutes. Cool for 3-4 minutes on baking sheet before removing to wire racks to cool.
Makes about 4 ½ dozen cookies.
